This part of the operation is a breeze – I could do it with my eyes closed, confidence from student cooking days propping me up. Confidence comes in handy once I start cooking tomato sauce; said confidence combats my sudden urge to turn all burners off, run away from the kitchen, and hide in bedroom painting my nails while servant cleans up and throws everything away.
